You can use this method to cook any fish that is 1 – 2″ thick. (Serves 4)
1.5 – 2 pounds of salmon fillet
½ – 1 cup marinade, fruit salsa, or any sauce or liquid you prefer
2 matching pie plates, glass or ceramic
- Smear half the marinade / liquid on bottom of a pie plate.
- Place fish on top of marinade (skin side down) and pour rest of marinade or sauce over the fish spreading evenly to cover top and sides of fish.
- Cover first pie plate with inverted second pie plate so that it fits exactly.
- Cook in microwave at full power for 5 – 6 minutes. Let sit for another minute, then serve.
